Only lightly salted, this traditional cut has a fabulous old-fashioned flavour. Put into a pan with root vegetables. Cover with water, add a few cloves, peppercorns and a bay leaf. Lid, bring to a simmer and cook slowly. If serving cold, allow to cool in its own juice.
