The true name of this greatly loved Italian dish, so enthusiastically embraced and adapted by the British. This is our very own family version, using our scrupulously trimmed Red Ruby beef mince, onions, garlic, tomatoes, fresh herbs and rich chicken stock. We allow it to simmer very, very slowly for several hours to produce an intensely flavoured sauce with plenty of "body".
